
Tea graded by leaf size tells you nothing about taste. We buy by lot, taste the harvest and put the picking date on the tin so you can judge freshness yourself.
01 — Weight
3 g per 200 ml. A heaped spoon is a guess; a scale is not.
02 — Heat
Green at 75 °C, oolong at 90 °C, black at boiling. Too hot turns leaves bitter.
03 — Time
Steep, taste, then decide. Most leaves are good for three infusions.
Choose a leaf and give it four minutes.
